A COMBINATION OF PASSION, MEDICINE AND FAMILY TRADITION

On November 27, 2019, La Patsa Lab Laboratorio Di Pasta was born.  

My name is Espedito Brunetto and all my life I have dedicated myself to study and scientific research. At the age of 18 I emigrated from Calabria (southern Italy) to study at the oldest university in Europe in Bologna. There I studied Chemistry and Medicine specializing in anesthesia and intensive care. Eight years ago I came to Barcelona with the need to discover and get to know a new city and its culture. 

Parallel to my vocation for Medicine, I have always had a passion for gastronomy, a hobby that has been present in my family all my life. On the one hand, my paternal grandfather was a pizza maker and baker, and on the other hand, my maternal grandparents owned their own restaurant. Even so, where I acquired the true passion for pasta was at home thanks to my paternal grandmother, who lived with us and since I was little she prepared us natural homemade pasta made by hand for the whole family.

2 years ago, I decided to combine my passions to create a unique project of different and innovative Italian gastronomy, where an ecological, artisan and handmade pasta is offered through a process without machines.

As a result of my knowledge in Medicine, the kitchen idea implemented in La Pasta Lab is respect for nutrients, making the cooking process of the dishes completely individualized, respecting the characteristics of each one:

  • Dishes cooked at a low temperature so as not to alter the protein structure of the food. 
  • We never bring the oil to the boiling point, so that the double bonds of the oil molecules are not altered, and thus they can preserve their characteristics and nutrients and that they are not harmful to health, thus favoring the immune system and decreasing the accumulation of fat in the body, apart from favoring the cardiocirculatory system. 
  • In recent years, commercial flours have been discovered that are toxic and that is why we have decided to add organic flours.

In short, the concept behind the Pasta Lab kitchen is the close connection between what we eat and what we are, since food plays a very important role for our health.
